Since its founding in 1965, the restaurant has been serving "soft pork cutlets that can be cut with chopsticks." To coincide with the completion of Ecute Ueno's large-scale renovation, which took approximately two and a half years, Tonkatsu Maisen will reopen with a new look. The restaurant offers a wide selection of items, including its signature pork cutlet sandwich and mini burger, as well as the popular special pork cutlet, as well as seasonal croquettes, fried seafood, and a variety of bento boxes.<\/p>\n

Reopening of Ecute Ueno on Tuesday, November 18th<\/strong><\/span><\/p>\n

A large-scale renovation that took approximately two and a half years is now complete. A total of 14 shops, including five new ones, have opened in the bakery and deli zone inside the ticket gates on the third floor. Ecute's first kids' space and eat-in space have also been installed, transforming the facility into one that combines everyday convenience and comfort.<\/p>\n

It's a time-consuming process, but we can't cut corners. Even a single missed tendon will ruin the shape of the meat when fried and change the texture when eaten. <\/p>\n

Breadcrumbs and frying<\/strong> oilWe use fresh breadcrumbs made daily from bread baked according to a specified recipe. These breadcrumbs are unique to Maisen, with different fillings, size, and shape than commercially available breadcrumbs. The frying oil is also custom-made for Maisen. We carefully fry the pork cutlets while adjusting the heating time. At Maisen, the glossy, crispy, and fluffy batter spreads out like a blooming flower, which we call "Ken-dachi" and is the pride of Maisen's tonkatsu. <\/p>\n
