    \n Popular craft gin "COFFEE \u00c9THIQUE" using "coffee husks" (bean husks that remain after coffee is extracted). The coffee beans used are a collaboration with "LIGHT UP COFFEE", and the coffee husks born from the store sales of the coffee & gin stand "The Ethical Spirits & Coffee" opened in Otemachi in January this year. I am reusing it.<\/p>\n

    Coffee husks are usually discarded in stores, but the aroma remains so that you can clearly feel the individuality and difference of each bean. However, the problem with coffee husks is that there are still few effective ways to use them. In addition, many kraft gin made from coffee are made with \u201cbefore extraction\u201d powder or extract, or with deep roasted beans and are smoky, and are \u201csingle origin light roasted raw materials\u201d. And the one with the shell is the first attempt as a coffee gin. For the raw sake, we use the local sake Hiraizumi's ginjo "Kasutori Shochu" from Akita Prefecture.<\/p>\n

    Since the type of coffee beans changes from batch to batch, it will be "ethical gin" where you can enjoy different flavors of coffee beans in the future.   • About "CACAO \u00c9THIQUE"<\/strong><\/li>\n<\/ul>\n

    \n \u201cCACAO \u00c9THIQUE\u201d, an ethical gin that \u201crecycles cocoa husks\u201d, was classified by country in the gin category \u201cWorld Gin Awards 2022\u201d (WGA) of WWA, the most prestigious competition in the whiskey industry last year. Received "Silver".<\/p>\n

    For the raw sake, we use the local sake Hiraizumi's ginjo "Kasutori Shochu" from Akita Prefecture. The scent of pineapple, the taste reminiscent of bananas and caramel, the acidity and fragrance, and the best one for cacao were selected. For botanicals, we use "cacao husk" instead of "cacao nibs", which is a high-quality cacao with excellent flavor and aroma called specialty cacao from "Whosecacao", which is used in general cacao products.<\/p>\n

    Cacao husk is the skin part that is separated and discarded in the processing process of roasting cacao in normal chocolate making. I discovered that it goes very well with "distillation," which extracts aroma components. With a rich and balanced cacao flavor, it has become an "ethical gin" with fruity and herbal characteristics. It is recommended to drink it as orange blossom together with orange juice.<\/p>\n
