The new Niigata ramen \u201cTsubamesanjo Se-Abura\u201d is a product developed by the ramen shop \u201cIppudo\u201d operated by the \u201cRiki no Gen Company\u201d affiliated with Riki no Gen Holdings Co., Ltd. "Tsubame Sanjo Backfat Ramen" has been selected and reproduced from the 5 major ramen in Niigata, which is said to be a ramen battlefield. Based on a light soup stock with dried sardines, the richness of the soy sauce and the sweetness of the backfat are accentuated. It is topped with char siu pork, bamboo shoots, and onions, which is a characteristic of Tsubame Sanjo back fat ramen.
\n In order to bring it closer to the authentic taste, we repeated trial productions, adding char siu broth to the soup to express the complex taste of soy sauce, and the backfat was also devised to bring out the umami and sweetness.<\/p>\n
