– Rediscover the charm of rice – Rice-based sweets “Komelantan” will be available for purchase in store and online from September 19th at Patisserie de Bonne Augur in Yushima, Bunkyo Ward.

“Komelantan” is a baked confectionery based on a Florentine confectionery, made with mochi rice cake skin and rice haze. It is a sweet created to help people rediscover the goodness of rice and enjoy it more closely in this time of what is said to be the rice turmoil of the Reiwa era.

Patisserie de Bonne Augur is a Western-style confectionery shop located between Yushima Tenjin and Kanda Myojin, which produces and sells sweets that combine Japanese and Western ingredients in a balanced way, with a theme of “lucky charms.”

The newly developed “Komelantan” is a dessert that combines Florentine-based caramel, almonds, and rice crackers inside a monaka shell, allowing you to enjoy the rich caramel flavor unique to Florentine, the fragrant taste of rice, and the crispy texture of the monaka.

The monaka skin is shaped like a plum, inspired by Yushima Tenjin Shrine, which is famous for its plum orchard.

Since ancient times, rice has been an auspicious food that has been deeply rooted in Japanese culture as an offering to the gods.



The kanji for rice is a combination of the numbers 10 and 8, and rice has been valued as a blessing that has prosperity, as well as the fact that rice ears bear abundant grains.

“Komelantan” is available in an original box decorated with auspicious plum blossoms. It looks cute and original, and is recommended as a wedding gift, a gift for a special occasion, or as a souvenir for entertaining clients.

He worked at Shin-Yokohama Grace Hotel for over 10 years, creating hotel desserts and wedding cakes, and later worked in the sweets planning department of Hilton Tokyo, a leader in the sweets industry. In 2018, he was appointed executive pastry chef at The Strings Hotel Tokyo InterContinental.

Throughout his career, he has competed in numerous competitions and has received over 20 awards, including the Nikkei Restaurant Menu Grand Prix and the Japan Cake Show Chairman’s Award.

In 2021, she became independent and runs an online cake specialty store.

In the same year, he began supervising the desserts at Miyajima no Yado Iwaso.
Pâtisserie de Bonne Augur will open in October 2022.
