JR East Cross Station Foods Company, Inc. (Headquarters: Shibuya-ku, Tokyo; President and CEO: Nishino Fuminao) will open Sobaichi Nihachi, a new brand of Sobaichi, at Ecute Ueno inside JR Ueno Station on Thursday, April 24, 2025.
About “Sobaichi Nihachi”
This soba specialty restaurant offers casual, traditional Nihachi soba (28% buckwheat flour) (※1), which was loved by the common people of Edo and continues to this day. In addition to the signature dishes “Special duck soba” and “Shrimp tempura soba” that are prepared in-house, we also offer locally produced toppings that go well with soba, such as “Sanriku wakame seaweed” and “Sayama taro croquette,” both of which are popular at “Sobaichi (※2).”
This brand was created with the idea that, especially during the limited mealtimes during busy daily lives, people should be able to sit down in a stylish restaurant, savor a bowl of authentic 28% buckwheat soba noodles, and replenish their energy.
*1 Nihachi soba is soba made with the golden ratio of 80% buckwheat flour and 20% binder, which gives it both flavor and firmness. It became popular during the Edo period, and there are various theories about the name, such as the fact that the price of soba at the time, “Juurokumon,” was a pun consisting of 2 x 8, in addition to the ratio of buckwheat flour and binder.
*2 What is Sobaichi?
Launched in March 2011, this is a station soba restaurant brand that aims to be a place that women can easily visit and that people will want to visit every day. Currently, there are 11 stores mainly in the Tokyo metropolitan area.
About Sobaichi Nihachi’s Commitment
1. Nihachi soba noodles made in-house
This soba is made with 80% buckwheat flour and 20% binder, and was developed in-house at our noodle factory to achieve the firmness and smoothness that are difficult to express with 100% buckwheat, as well as the flavor of the soba that lingers in your nose. In addition, we have increased the amount of noodles in the single serving of our popular 28% buckwheat soba so that you can eat your fill.
2. Two Signs
The brand’s signature products are the “Special Duck Soba” and “Shrimp Tempura Soba,” both made in-store. These two signature dishes, packed with care, further enhance the deliciousness of the Nihachi soba.
3. Free fried tempura bits
We offer a free topping service of fried tempura bits. Floating a few fried tempura bits on top of your soba noodles will add richness to your dish, and you’ll definitely feel more satisfied. This is a self-service service so you can add toppings to your liking.

Small duck rice bowl and soba noodles 1,200 yen (tax included)
Enjoy the smooth texture, flavor, and smooth throat feel of Nihachi soba noodles served warm in a soba noodle bowl or in a bamboo steamer.
The small duck rice bowl is made in-store in a roast beef style, so that you can enjoy the sweet fat and unique flavor of the duck meat. The duck meat is grilled before serving, so you can enjoy the savory flavor as well as the delicious taste. Please also enjoy the “green onion tempura” and “wasabi” together.
