On Thursday, December 19, 2024, we will be opening a new store, “Sushi Yuu Haruka,” in Okachimachi.
You can enjoy casual Edomae sushi prepared by the young chef Kuroda Naoki, who has trained at two restaurants: the Michelin-starred restaurant “Sushi Yuu” and the extremely difficult-to-book restaurant “Sushi Yuu Tsubasa Ebisu,” which is booked up six months in advance.
Like our sister restaurants “Sushi Yuu Tsubasa Ebisu” and “Sushi Yuu Tsumugi Roppongi,” we offer a relaxed and enjoyable experience at reasonable prices.

The General’s Thoughts
In the sushi industry, young people have to go through a long apprenticeship, and many skilled craftsmen are unable to stand on the sushi chef’s premises and end up being forgotten.
We are opening our third store in order to realize the wish of Sushi Yuu chef Jun Ozaki to create a place where young craftsmen who have the skills to carry on sushi culture and who will be the next generation can thrive without going bankrupt, and to somehow break this situation.
Concept:
We source carefully selected ingredients using the keen eye of Ozaki Jun, the head chef of a restaurant that has been awarded a one-star rating.
A young chef continues to train and prepares Edomae sushi as the new head chef.
A course menu with drinks ranging from rare sake to tea.
We offer a relaxed and enjoyable experience at a reasonable price.
“Sushi Yuu Haruka”
“Sushi Musubi Tsubasa” was named so that the chefs could accumulate their skills, bear fruit, and then take flight. It is a place where the trained chefs can further hone their techniques and manners and aim for even greater heights.
It is a place that has the skills to inherit sushi culture, respects tradition, but also keeps its sights on goals, adopts the changes of the times, and continues to demonstrate new challenges and originality.
Our goal is to be a place where customers can enjoy high-quality sushi on a daily basis and that will be loved by our customers for a long time to come.
Our “aspirations” are embodied in this.
