Offering a variety of menu items using seaweed, including bento lunches and light meals
Kozen Honten Co., Ltd., a seaweed manufacturer celebrating its 130th anniversary, will open a restaurant called "Nori Kitchen HANARE" on Wednesday, May 1st, 2024.
On January 17, 2022, which is Rice Ball Day, we opened our directly managed store "Nori Kitchen" with the hope that people would know about truly delicious seaweed and enjoy eating out with seaweed. We set up a directly managed store on the first floor of our office where people can purchase rice balls and seaweed products. Diagonally opposite this directly managed store, we also set up a more authentic restaurant called "Nori Kitchen HANARE."
- Thoughts on "Nori Kitchen HANARE"
This year marks the 130th anniversary of the founding of Kozen Honten Co., Ltd. In light of the current challenges in the industry, such as fewer households keeping seaweed on hand to eat and less use of seaweed as a gift item, we would like to spread the word from Asakusa, Tokyo, as a place where people can become aware of the goodness of seaweed.

- The concept of "Nori Kitchen HANARE"
We want people to enjoy eating seaweed anywhere! With that in mind, we are focusing on offering takeaway lunch boxes.
We would be delighted if our store could become a place where everyone, from children to adults and foreigners, can feel close to nori.

We have prepared 12 seats to provide a relaxing space. We also added some fake greenery to create a soothing environment.

"Elegant Salmon and Seaweed Bento"
・Price: 1,100 yen (tax included)
Ingredients: white rice, nori (elegant), salmon, broccoli, pumpkin, asparagus, egg, carrot

・Attention to detail:
①We use Kozen Honten's highest quality seaweed, seaweed from the Ariake Sea that melts in your mouth.
The rice is divided into two layers, the bottom layer is made of seaweed on top of bonito flakes and soy sauce, and the top layer is just rice and seaweed.
This seaweed rice is easy to cut with chopsticks even when the seaweed becomes moist.
We also provide crispy seaweed separately, so that customers can enjoy the original flavor of the seaweed by eating it as it is, or wrap it around ingredients like temaki sushi, etc. We provide one sheet of seaweed, so you can enjoy two different types of seaweed, moist and crisp.
②We use "Koshiibuki" rice from Niigata Prefecture. This rice is delicious even when cooled.
3) The vegetables used are broccoli and pumpkin from Hokkaido. We also added carrot radish and asparagus to add texture.
④The tamagoyaki (rolled eggs) are homemade and made with a strong dashi stock flavor.
⑤Uses sockeye salmon. This salmon has a strong meaty flavor and a good amount of fat.

Demi-tama Hamburger Bowl with Noriat®

Ingredients: white rice, seaweed, hamburger steak, fried egg, broccoli, peppers
・Special feature: We use "NoriArt®" which utilizes our laser cutting technology for the seaweed. All you have to do is cut the designed seaweed apart from the seams, so even children can easily try it. We hope you will enjoy your lunch time by decorating the seaweed as you like.

Fried chicken bento

Ingredients: white rice, seaweed, fried chicken, egg, pickled radish
・Special feature: Domestically produced chicken is used for the fried chicken. It is fried with HANARE's special soy sauce-based seasoning. We put seaweed on the rice because we want customers to feel closer to seaweed.

"Nori Kakeru Salad"

Ingredients: bouquet lettuce, kale, radish, shallots, fruit carrots, radishes, Nori Kakeru-kun (seaweed)
・Special feature: We choose ingredients that are good for your body. Bouquet lettuce has a taste that is not bitter or peculiar. Kale is a superfood that supplements nutrients that modern people tend to lack, such as vitamins, minerals, and dietary fiber. Radicchio is characterized by its relatively high potassium content and vivid color. Fruit carrots, radishes, and shallots are added to add color, and this product is served with our national brand product "Nori Kakeru-kun" as a dressing.
